Oh, hello! Happy near-end-of-winter, friends! I am so excited to share with you my latest obsession: near hands-off oven roasted turkey thighs that are packed with flavour. If you want that Sunday roast vibe on a busy weeknight, this is the recipe for you! Each time I make it I am so surprised at how flavourful it turns out for how little cost and effort it takes.
If you’ve been keeping up with me on social media for the past 10-ish months, you’ll have noticed that I have been a busy gal partnering with Manitoba Turkey Producers to represent them both on CTV and Great Tastes of Manitoba. This past year of partnership has been an absolute dream come true and, as mentioned in my previous posts, I have learned so much. Even though the 2021 promotions have wrapped-up, I am still enjoying turkey as much as I can. I 10000% believe I truly need to love, support and enjoy a product before I work with them so when I am smiling at ya on a screen holding a perfectly roasted turkey (thank you very much), you know it’s for real!
I’ve also been up to managing a bit of an injury, helping my pup recover from surgery and enjoying as much of the Manitoba winter I possibly can! While these is much too much snow for my liking, I have been able to snow shoe and enjoy the fresh air. I’ve also been playing *a lot* of settlers of catan. Like, a bit too much. I am eager for Spring but as it’s not quite feeling like it just yet, I figured my photos should look a bit more dark and moody until it does.
This recipe for Roasted Turkey Thighs is such a treat as it uses minimal ingredients and is perfectly portioned for two. I like to make this on a busy weeknight where I can mix-up the sauce in no time and have the thighs roasting while I finish up some work and catch-up on emails before signing off of the laptop for good. About an hour later, I have a flavourful main that is paired so well with a handful of mixed greens or even a bag salad and instant rice. Yes, this is a real meal in the Peppers & Pennies household – I keep it simple, baby!
Chances are you have everything you need for the sauce on hand at home and turkey thighs are an affordable cut that can be sourced at most grocery stores. There really isn’t anything better than a stress-free and affordable meal, now is there?
Roasted Thyme + Dijon Turkey Thighs for Two
Ingredients
- 2 Turkey Thighs
- 3 tbsp Canola Oil
- 1 tbsp Fresh Parsley chopped
- 1 tsp Fresh Thyme
- 1 tsp Dijon Mustard grainy
- 3 dashes Worcestershire sauce
- 1 pinch Salt and Pepper each
Instructions
- Preheat over to 350. Line deep baking dish with foil. Remove Turkey Thighs from packaging and pat dry with paper towel. Set aside.
- In a small bowl mix remaining ingredients.
- Using a food safe brush, brush sauce on dried Turkey Thighs. Roast uncovered in oven for about 60 minutes until internal temperature with meat thermometer reads 165 F.
- Remove roasted Turkey Thighs from baking dish and cover with foil to rest for 5 minutes. In the meantime, prepare your plate with a simple salad and rice, if desired. Enjoy!
