Hey guys! As you may know, I have been having a bit of a hard time around the kitchen lately.  I broke a finger playing attempting to play football and now my index finger is in a splint. Fun!

While it gets easier and easier to manage everyday, I wanted a bit of a break from knives and heavy pots and pans. I approached my talented friends and fellow food bloggers over at Food Bloggers of Canada and asked them to share with me recipes that are affordable, made from scratch and so easy that they can be managed with one hand.

So, for all you klutzes out there who fumble the catch, the proud new moms and dads who don’t want to put their little ones down and those who prefer to not navigate the kitchen without a cocktail (or two) in hand, these affordable, easy, one-handed recipes are for you!

This chicken packs a unique and flavourful punch. Better yet, it’s made with chicken thighs so it really won’t make a dent in your bank account.

You don’t even need to get the cutting board out for this stunner of a side dish! Look Ma, no chopping!

Don’t fall into the trap of ordering-out! Featuring brown rice, lots of (pre-cut) veggies, tamri and eggs this fried rice is a surprisingly refreshing spin on a take-out favourite.

Make a double batch when cauliflower is on sale,  freeze a few portions and thaw when you are busy! While chopping is involved in this recipe, you blend it all in the end, so pretty uniform cuts aren’t required.

You can’t get any cheaper than chickpeas and while you do have to chop a bit, may I suggest a Slap Chop to dice the onions and jalapeno? Seriously that tool has been a lifesaver the past few weeks (Thanks Sebastian & Susan)!

Row 4 – Recipe #1 – Spinach Pesto Israeli Couscous with Prawns by My Kitchen Love
If you want a healthy and exotic dinner done in less than 15 minutes, you need to make this. Perfect for a dinner party!

Row 4 – Recipe #2 – Shakshuka By My Kitchen Love
Alright – another repeat contributor but Samantha has three little girls so you know she is a pro at making food on a budget with no free hands. This egg-based dinner was made by me last week and it was a hearty hit that came together fast.

Row 4 – Recipe #3 – Quick Chocolate Peanut Butter Brownies by Imagelicious
Every meal should end in dessert and so should this round-up! This stunner of a brownie is mixed in a food processor and is raw, meaning you don’t have to figure out how to handle a hot pan with one hand!
