Hello, friends! It’s been a hot minute, hasn’t it?

I have been enjoying returning to the home ownership life and been fully immersed in work. It is the busy time of year for campus recruiting and this year has been extra special, with many speaking engagements – even presenting to a room over 200 students, a whirlwind trip to Edmonton and coaching an endless amount of bright and talented post-secondary students. Throughout all this I have been unpacking and settling into country life. Like, really. My weekends, once filled with brunch and cocktails now consist of hauling dead-fall from the bush and then sawing the dried and aged wood into firewood. I don’t think I have ever felt stronger and as physically fit in my life and it’s a great. I have been recipe testing and cooking and trying to get photos right for the blog but, alas, it is the dead of winter and with my work schedule I have had limited light. I am also knee-deep into my Master’s degree (and kind of rocking it, if I can say so myself) so to say I have been busy is accurate. Oh well! I am still here! I have some great recipes up my sleeves in the coming weeks and months and very much looking forward to what 2020 has in store!

I figured I would share with you a suggestion for Valentines day! You see, going out for a lovely meal, sharing a romantic glass of wine or going to a movie is all well and good but I like acts of love. Yes, acts of service is my love language! To demonstrate, let’s chat about caramel.

There are few things on this earth I don’t enjoy eating and let me tell you caramel is one of them (also see; mushrooms, pine nuts and overly-cinnamony baked goods) There is something about caramel chocolate bars or ice cream that has me wishing for something different – like peanut butter or mint. Honestly, I can take it or leave it. BUT if I make it for someone I love and care for? Now that is an act worthy of a Valentines celebration!

If you are wondering how the heck I made a delicious caramel topping without really enjoying it, well, the man I made it for gave it the seal of approval – as did his mom (Hi, Michele)! We enjoyed this whisky caramel over my rich and delicious brownies, but this can also be served over ice cream, as a topping to fancy coffees, over waffles or even just with fruit and nuts dipped into it. It is pretty thin due to the whisky, but it still has the classic sticky, ooey-gooeyness that caramel is famous for.  It also packs a punch with a couple shots of whisky! Cheers!

Whisky Caramel Topping

Course Dessert

Ingredients
  

  • 1/2 cup white sugar
  • 1/4 cup butter (salted)
  • 1/4 cup Whipping cream
  • 2 shots Canadian Whisky (2 oz or 1/4 cup)

Instructions
 

  • In a large bowl, over double boiler, melt sugar. Scrape sides of bowl to ensure even melting. Sugar will turn to a rich dark brown colour. BE CAREFUL, do not over cook! Once mixture is full melted, remove from heat.
  • Add butter and stir until evenly melted in ugar. Mixture will bubble and double in size.
  • Once butter is fully incorporated slowly drizzle cream into sauce and mix. Once fully mixed, add Canadian whisky and whisk once more to fully bring the sauce together.
  • Pour hot caramel mixture into jar or dish for cooling, or serve warm over a freshly baked pie, brownies or cake! Store in the fridge in a sealed container and mix fully before serving.
