Okay, I don’t brag often. While I am not the most humble person, I also don’t shout from the rooftops nearly enough. Sometimes, you just gotta recognize you hit a stroke of genius or accomplished something great and shout it out for all the world to hear! Well, consider me shouting! Because…. COME ON, look at this beauty that I thee dub: Mexican Egg + Refried Beans Flatbread! 

Not only is it visually stunning, it has all the elements that I love in a dish; flavourful, affordable, made from local ingredients and easy enough to be thrown together after a few cervezas. In fact, it’s so easy that this isn’t a true recipe and more of a how-to or method because, like pizza toppings and tacos, it’s customizable and doesn’t need measurements. Another fabulous thing about this Mexican Egg + Refried Beans Flatbread is that it’s also perfectly acceptable to be eaten at breakfast, brunch, lunch, afternoon tea, cocktail hour, dinner… you get the picture. 

I am also very egg-cited (I had to!) about this post as I created it in partnership with my dear friends at Get Cracking.  I feel that this dish is a great way to show off all that eggs have to offer. Not only are they easy to work with and can fit into any budget but they pack a healthy punch full of protein. Eggs totally makes this flatbread a meal versus  just a snack and I am here for it! Yay for eggs!

When creating and serving this flatbread, don’t forget to have a little fun! You can use this as an opportunity to clean-out the fridge and use-up the little bits of veggies, cheese or sauces that you have on hand. The flatbread, refried beans and egg combo is delicious on it’s own too! The last time I made it I served it like nachos with a bowl of salsa and another of sour cream and it was very fun to dunk and eat!

I honestly struggled with that when I took a trip to the grocery store – many flatbread options vary in size. Some are the size of a medium pizza, some are smaller, some are long and skinny and are all different portion sizes. Also, with the rise of interest in home baking, many of us have bits of sourdough to use up. Recipes (or should I say how-to guides) like this are great to have to share methods versus a strict recipe – as that is where the creative juices truly flow!

Plus, does anyone ever follow the recommended amount for cheese in a recipe? I rest my case!

 

How-to Make Mexican Egg + Refried Beans Flatbread

Mexican Egg + Refried Beans Flatbread is a super simple dish that can be served anytime from breakfast to late night snack and everything in between! Simply throw on your favourite Mexican inspired ingredients and top with eggs to enjoy this stunning flatbread.

Ingredients
  

Required Ingredient

  • Flatbread
  • Refried beans (canned or homemade)

  • Shredded Cheese

    Monterey Jack is a delicious combo
  • Eggs

Suggested Toppings (to be baked):

  • Tomatoes
  • Red Onions
  • Bell Peppers
  • Chili Peppers
  • Corn
  • Deli Meat
  • Leftover Roast Chicken

Suggested Toppings (to be added after baking):

  • Avocado
  • Cilantro
  • Hot Sauce
  • Red Chili Flakes
  • Sour Cream
  • Guacamole

Instructions
 

  • Preheat the oven to 425. Layout flatbread(s) on parchment paper on the cooking sheet. Spoon a generous layer of cold refried beans on top to create “sauce”.
  • Cover refried beans with shredded cheese.
  • Add additional ingredients from ‘to be cooked’ list.
  • Crack an egg (or multiple!) on top.
  • Bake in the oven at 425 for 8-10 minutes or until eggs have reached desired doneness and cheese is melted.
  • Top with remaining ingredients and carefully cut and serve!
