There is something comforting about finding joy in the little things, don’t you think? While things right now may seem quite different, I am finding a lot of comfort in holding-up routines, enjoying the quiet moments and trying to make the best out of the everyday. For example, the highlight of my days is walking with my dog and watching her run around and chase sticks. I have also been enjoying the extra time in the kitchen and making simple yet delicious desserts and meals for my boyfriend and me. I am talking about revisiting old favourites like Steel Cut Oatmeal and Chocolate Cookies and Cheese and Potato Perogies. I am talking about deep dives into my recipe repertoire and it has been fun!
I also had a blast coming up with my annual Holiday Drink recipe for you! I have been creating them since 2017 and decided the tradition must continue on! For 2020, I made a cozy and comforting drink that is perfect for the slow and chilly days of December. This year, I brought a little tropical flair to an age-old classic that is officially dubbed Coconut Hot Chocolate.
Even better, I’ve teamed up with my friends from Dairy Farmers of Manitoba to bring you this delicious recipe! Dairy Farmers of Manitoba represents all dairy farmers in the province, and I am proud to support them. In a time that is uncertain, we can have confidence in the delicious, nutritious and versatile milk and milk products that we find in grocery stores in Manitoba. If that isn’t comforting, I don’t know what is!
The Coconut Hot Chocolate is packed with flavour and sure to help keep you warm and energized for all the outdoor winter activities like hiking, snowshoeing and quinzee building (new winter goal?!?!). Plus, it’s also made with only 6 ingredients of milk, sugar, cocoa powder, coconut extract (found in the baking aisle!), whipped cream and coconut flakes. This drink comes together very quickly so it will be sure to be on repeat this Holiday season and well into the New Year!
The highlight of making this recipe is after adding the whip cream. This is when the magic happens! You make it snow.
Yep, you read that right! You sprinkle flaked coconut on top! It’s almost as if it’s snowing right on top of your mug. How cute is that? It’s also okay if things get a little bit messy. In fact, it makes it a bit more fun!

Coconut Hot Chocolate
Ingredients
- 2 ¼ cups Milk divided
- 2 Tbsp Unsweetened Cocoa Powder
- 2.5 Tbsp White Sugar
- 1/4 Tsp Coconut Extract or Imitation Coconut Extract
- Whipped Cream for Topping
- 1 Tbsp Sweetened Flaked Coconut
Instructions
- Whisk ¼ cup of milk with cocoa powder and sugar. Set aside.
- Heat milk over medium heat, stirring often.
- Once milk is warmed throughout, add cocoa powder and sugar mixture to pot. Slowly whisk until fully incorporated.
- Remove from heat and add coconut extract.
- Pour Coconut Hot Chocolate into your favourite mugs. Top with Whipped cream and sprinkle with Sweetened Flaked Coconut. Enjoy!
