Let’s face it. When you are on a budget, baking treats is often out of the question. Baked goods are a lovely extra but after the cost of butter, sugar and mix-ins it can be an expensive venture. Thankfully, not every sweet treat will put a strain on the grocery budget.
Baking with bananas is a great way to off-set the expense. Bananas are cheap to begin with and can often be purchased at a reduced price once they have started to ripen. In the case of my Banana Chocolate Chip Muffins, the bananas bulk-up the muffin mixture and thus reduce the need for additional, more expensive, ingredients. The semi-sweet chocolate is a perfect addition to the banana flavour and will be sure to please! Throw them in a lunch bag for a mid-day snack or share them with friends over a strong cup of tea. Everyone deserves a treat from time-to-time!
Banana Chocolate Chip Muffins
Ingredients:
- 3 over ripe bananas
- 1/4 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1/3 cup melted butter
- 1 tsp baking powder
- 1 tsp baking soda
- 1 1/2 cups all purpose flour
- 1 package of semi-sweet chocolate chips
Method:
- Preheat oven to 375 degrees and line muffin tin with paper cups
- In a small mixing bowl, mash over ripe bananas. Add sugars, egg and butter
- In a separate bowl mix remaining ingredients
- Add banana mixture to dry mixture and bring together (do not over mix!)
- Spoon mixture into paper cups and bake for 20 minutes
Makes 12 muffins
